Pasta salad tips

Easy & healthy pasta salads are always a good choice whenever you are busy or just in a mood for a light meal. Especially after all this Christmas madness and overeating it is time to eat slightly different.
You can use almost any pasta to make a pasta salad, but nowadays I prefer farfalle 🙂

Here are few of my favorite recipies for a happy tummy ~


Pesto Tortellini Salad

  • 1 package (19 oz.)  cheese tortellini
  • 1 can (2-1/4 oz.) sliced black olives, drained
  • 5 slices bacon, cooked then crumbled
  • 1/3 cup prepared basil pesto
  • 1/2 cup freshly grated Parmesan cheese
    (tip: also tasty with some fresh minced garlic and tomato)

  • 8 ounces bowtie pasta noodles
  • 4 cups spinach leaves
  • ½ cup craisins
  • ⅓ cup cashews or Diamond of California Pine Nuts
  • 1 4-ounce can mandarin oranges, drained
  • ¼ cup cilantro leaves, roughly chopped
  • ⅓ cup teriyaki sauce (the thicker, the better!)
  • ⅓ cup rice wine vinegar (may sub apple cider vinegar)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder (if you have it)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon sugar
  • ½ cup oil (such as vegetable oil, canola oil, olive oil)

    Pesto pasta with grilled chicken

    This is definitely a classic recipe however you can always add some little deatils to make it more extraordinary.

  • pasta shapes
  • olive oil
  • garlic
  • tomato
  • basil & pesto basil
  • ½ ripe avocado
  • grilled chicken brests (if you like spicy,don´t forget to use grill spices or chilli powder. Also very tasty if covered in various herbs that gives the chicken beautiful flavour)
  • ½ tea spoon lemon juice or orange juice to add acidity

    Broccoli pasta with grapes


  • 2 c. dry bow-tie pasta {about 8 oz.}
  • 4 c. fresh broccoli florets {about 1 pound}
  • 1 1/2 c. halved seedless red grapes
  • 1 c. chopped pecans
  • 6 slices bacon, cooked and crumbled
  • 1 c. mayonnaise
  • 1/4 c. granulated sugar
  • 2/3 c. diced red onions
  • 1/3 c. red wine vinegar
  • 1 tsp. salt

Can this recipe get any more easy? Probably not, unless someone else makes it for you ~

If you´re not a fan of mayo, balsamic glaze is then a perfect option!

    • 1 pound dry pasta
    • 1 pint fresh strawberries, hulled and halved
    • 1 ball fresh mozzarella, diced
    • 1/2 cup loosely packed torn fresh basil
    • 3 tablespoons balsamic glaze (here are used DeLallo, but see instructions below for a homemade alternative)

Tuna pasta salad with capers and chickpeas

Tuna lovers like me? Then you have to try this out ~

  • ¼  Green Beans
  • ½ Orecchiette Pasta
  • ½ pint Grape Tomatoes, halved
  • 1 15 oz. can Chickpeas, drained and rinsed
  • 1 5 oz. can Olive Oil-Packed Tuna, flaked
  • 3 Tbsp. minced Red Onion or Shallot
  • 3 Tbsp. Capers

    For the Vinaigrette:
  • 2 tsp. Dijon Mustard
  • 1 Tbsp. Red Wine Vinegar
  • 3 Tbsp. Extra Virgin Olive Oil
  • ¼ tsp. Kosher Salt
